Research Experience
My research focuses on optimizing the synthesis of edible coating nanoparticles using the ionic gelation method, with chitosan as the base and lactic acid bacteria biosurfactant as an additive. The goal is to enhance the antimicrobial properties, stability, and homogeneity of these nanoparticles. Using Response Surface Methodology (RSM), I optimized the concentration of the edible coating nanoparticles and performed various analyses, including microbial count tests on strawberry surfaces, LC-MS, antifungal analysis, particle size distribution, zeta potential, FTIR, and physiochemical properties. The results demonstrated that the biosurfactant-enhanced nanoparticles created a homogeneous coating, which successfully preserved strawberries for up to 12 days at 4°C.
